  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest and juice of 1 large lemon
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • Optional garnishes: grated Parmesan cheese, extra lemon wedges

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions (usually 9-11 minutes) until al dente. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, pat the shrimp dry with paper towels and season lightly with salt and pepper.
  3. Heat olive oil and 2 tablespoons butter in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and stir for about 30 seconds until fragrant. Add shrimp in a single layer and cook about 2 minutes per side until pink and opaque. Remove shrimp to a plate.
  4. In the same skillet, add remaining 2 tablespoons butter. Once melted, add lemon zest and juice, stirring to combine. Add chopped parsley and basil, saving a little for garnish. Adjust seasoning with salt and pepper.
  5. Return cooked shrimp to the skillet. Add drained linguine and toss gently to coat in the garlic butter sauce. Add reserved pasta water a tablespoon at a time if sauce is too thick, until desired consistency is reached.
  6. Taste and adjust salt, pepper, or lemon juice as needed. Plate immediately, garnish with reserved herbs, and sprinkle with Parmesan if desired.

Keep heat moderate to avoid burning garlic. Reserve pasta water to loosen sauce and achieve a silky texture. Do not overcook shrimp to prevent rubbery texture.
