A fast and flavorful beef and broccoli stir-fry that comes together in under 20 minutes, perfect for busy weeknights or casual dinners. Tender flank steak and crisp broccoli are coated in a savory, slightly sweet sauce with a hint of ginger and garlic.

Ingredients

Scale
  • 1 lb flank steak, thinly sliced against the grain
  • 3 cups fresh broccoli florets, washed and dried
  • 2 tablespoons vegetable oil or canola oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1/4 cup beef broth or water
  • Optional garnishes: sesame seeds, thinly sliced green onions

Instructions

  1. Slice the flank steak thinly against the grain into strips about 1/4 inch thick. Wash and cut broccoli into bite-sized florets and pat dry.
  2. In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, beef broth or water, sesame oil, and cornstarch slurry. Set aside.
  3. Heat wok or skillet over high heat and add 2 tablespoons vegetable oil. Heat until shimmering but not smoking.
  4. Add sliced beef in a single layer without overcrowding. Sear without stirring for 1-2 minutes until browned, then stir-fry until just cooked through. Remove beef and set aside.
  5. Add a little more oil if needed. Stir-fry minced garlic and grated ginger for about 30 seconds until fragrant. Add broccoli and stir-fry until bright green and tender, about 3-4 minutes. Add a splash of water and cover briefly if softer broccoli is desired.
  6. Return beef to the pan. Pour sauce over beef and broccoli. Stir and cook for 1-2 minutes until sauce thickens and coats ingredients.
  7. Remove from heat. Taste and adjust seasoning if needed. Garnish with sesame seeds and sliced green onions if desired.

Notes

Slice beef thinly against the grain for tenderness. Use high heat and avoid overcrowding the pan to get a good sear. Prepare all ingredients before heating the pan to ensure smooth cooking. For gluten-free, substitute tamari for soy sauce and gluten-free oyster sauce. Leftovers keep well refrigerated for up to 3 days and freeze well.
