  • 1 bottle (750 ml) chilled Prosecco
  • 1 cup (240 ml) dry white wine (Pinot Grigio or Sauvignon Blanc)

  • 1/2 cup (120 ml) peach nectar or juice (optional, unsweetened preferred)
  • 2 tablespoons simple syrup (adjust to taste)
  • 1 medium lemon, thinly sliced
  • Ice cubes as needed for serving

Instructions

  1. Rinse the white peaches and lemon thoroughly. Slice peaches thinly, about 1/4-inch thick, and lemon into thin rounds. Set aside a few peach slices for garnish if desired.
  2. Lightly crush the mint sprigs by bruising them between your palms or with the back of a spoon to release aroma without bitterness.
  3. In a large pitcher, combine the sliced peaches, lemon rounds, and mint leaves. Pour in the white wine and peach nectar (if using). Stir gently to mix flavors.
  4. Stir in the simple syrup, tasting as you go to adjust sweetness.
  5. Cover the pitcher and refrigerate for at least 1 hour to let flavors meld. For best results, prepare up to 24 hours ahead.
  6. Just before serving, slowly pour in the chilled Prosecco to preserve bubbles. Stir gently once more.
  7. Add ice cubes to the pitcher or serve over ice in individual glasses.
  8. Garnish each glass with a few peach slices and a sprig of mint. Enjoy immediately for best fizz.
