  • 1 teaspoon all-purpose flour
  • 1/2 cup store-bought salted caramel sauce
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper or silicone liners.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt until the mixture resembles wet sand. Spoon about 1 heaping tablespoon into each liner and press firmly. Bake crusts for 5 minutes, then set aside.
  3. In a large bowl, beat softened cream cheese until smooth (about 1 minute). Add Greek yogurt or sour cream, egg, vanilla extract, and powdered sugar. Beat until creamy and lump-free.
  4. Peel and dice the apple. In a small bowl, toss apples with brown sugar, cinnamon, lemon juice, and flour. Optionally, sauté apples in a small saucepan over medium heat for 2-3 minutes until slightly softened.
  5. Divide cheesecake filling evenly among muffin cups (about 2 tablespoons per cup). Top each with a spoonful of apple mixture, gently pressing apples into the filling.
  6. Bake for 18-20 minutes, or until centers are just set and edges look slightly puffed. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once cooled, drizzle each bite generously with salted caramel sauce and sprinkle with flaky sea salt.
  8. Refrigerate bites for at least 1 hour before serving for best texture.
