  • 1/2 cup feta cheese, crumbled
  • 1/3 cup dried cranberries
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper if needed.
  2. Peel and cube the sweet potatoes into 1-inch pieces. Place them in a mixing bowl.
  3. Toss the sweet potato cubes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  4. Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer. Roast for 20 minutes.
  5. Use a spatula to flip the sweet potatoes. Roast for an additional 15-20 minutes or until they’re golden brown and tender.
  6. Remove the potatoes from the oven and let them cool slightly. Sprinkle the crumbled feta and dried cranberries evenly over the top.
  7. Drizzle with balsamic glaze (if using) and sprinkle fresh parsley for a pop of color.
