Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  2. Add chopped fresh spinach and cook until wilted, about 3-4 minutes. Transfer to a bowl and let cool slightly.
  3. To the cooled spinach, add crumbled feta, softened cream cheese, chopped sun-dried tomatoes, lemon zest (if using), fresh dill or parsley, salt, and pepper. Stir until well combined.
  4. Lightly flour your work surface. Roll out the thawed puff pastry sheet into a rectangle roughly 12×10 inches. Roll thinner if desired but do not tear.
  5. Spread the spinach and feta mixture evenly over the puff pastry, leaving about a 1/2-inch border along the edges.
  6. Starting from one long edge, carefully roll the pastry into a tight log. Pinch the seam to seal.
  7. Use a sharp knife or pizza cutter to slice the log into approximately 1/2-inch thick pinwheels, yielding about 20-24 slices.
  8. Place the pinwheels cut-side up on a parchment-lined baking sheet, leaving space between each.
  9. Preheat oven to 375°F (190°C). Bake pinwheels for 15-18 minutes or until golden, puffed, and crisp.
  10. Let cool on the baking sheet for about 5 minutes before transferring to a serving platter. Serve warm or at room temperature.
