  • 23 pounds beef roast (chuck roast or bottom round roast)
  • 2 cups low-sodium beef broth
  • 1 medium onion, sliced thinly
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch mixed with water
  • Mashed potatoes (prepared separately or store-bought)
  • Thick slices of white or sourdough bread
  • Salt and pepper to taste

Instructions

  1. Season the beef roast generously with salt and pepper. Set it aside while you prepare the other ingredients.
  2. Place the sliced onion and minced garlic in the bottom of the slow cooker. Lay the seasoned beef roast on top.
  3. Pour the beef broth and Worcestershire sauce over the beef. Make sure the liquid covers at least half of the roast.
  4. Cover and cook on low for 8-10 hours or high for 5-6 hours. The beef should be fork-tender when done.
  5. Remove the beef and set it aside. Skim off excess fat from the liquid in the slow cooker.
  6. Mix the cornstarch with water to create a slurry and whisk it into the liquid. Cook on high for 5-10 minutes until the gravy thickens.
  7. Slice the beef and serve it over a slice of bread, topped with mashed potatoes and smothered in gravy.

Notes

For added flavor, sear the beef before slow cooking. Customize the gravy with heavy cream or hot sauce. Add root vegetables like carrots or parsnips for extra texture.
