A hearty and flavorful casserole featuring tender potatoes, seasoned ground beef, creamy beans, and melty cheese, all cooked effortlessly in a slow cooker.

  • 1 lb ground beef (lean or extra lean)
  • 4 russet potatoes, peeled and diced into bite-sized pieces
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat for about 5 minutes, breaking it up with a wooden spoon. Drain excess grease.
  2. Add the chopped onion and minced garlic to the skillet and sautΓ© for 3-4 minutes until softened and fragrant.
  3. Layer the diced potatoes in the bottom of your slow cooker.
  4. Top the potatoes with the cooked ground beef mixture.
  5. Add the kidney beans, diced tomatoes (with their juice), frozen corn, smoked paprika, salt, and pepper.
  6. Pour the chicken broth over the ingredients, ensuring everything is evenly distributed.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
  8. In the last 15 minutes of cooking, sprinkle the shredded cheddar cheese over the top. Cover and let it melt.
  9. Once done, gently stir the casserole, garnish with fresh parsley if desired, and serve warm.

Notes

For extra flavor, use smoked gouda instead of cheddar cheese. Adjust seasoning midway through cooking and ensure potatoes are evenly diced for consistent cooking.
