A comforting and easy slow cooker recipe featuring tender pork tenderloin glazed with a sticky honey garlic sauce, paired with juicy roasted peaches for a perfect sweet and savory balance.

Ingredients

Scale
  • 1 to 1.5-pound pork tenderloin, trimmed of excess fat
  • 1/4 cup honey (preferably raw or organic)
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil (optional, for searing)
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • 2 large ripe peaches, sliced into wedges
  • 2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried thyme)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the pork tenderloin dry with paper towels. Season evenly with salt and black pepper.
  2. Optional: Heat olive oil in a skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2 minutes per side.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes if using.
  4. Place the pork tenderloin in the slow cooker base. Pour the honey garlic sauce evenly over the pork.
  5. Arrange peach slices around the pork and sprinkle fresh thyme evenly on top.
  6. Cover and cook on low for 4 to 5 hours, or until the pork reaches an internal temperature of 145°F and is tender.
  7. Remove the pork tenderloin from the slow cooker and let it rest for about 5 minutes before slicing.
  8. Slice the pork into medallions and spoon the roasted peaches and sauce over the top.

Notes

[‘Searing the pork before slow cooking adds a caramelized crust and depth of flavor but is optional.’, ‘Let the pork rest after cooking to keep it juicy.’, ‘Adjust honey amount to reduce sweetness or substitute part with brown sugar for a molasses note.’, ‘Use a meat thermometer to ensure pork reaches 145°F to avoid under- or overcooking.’, ‘If sauce is too thin after cooking, simmer it on medium heat to thicken.’, ‘Frozen peaches can be used if fresh are unavailable; thaw before adding.’, ‘For gluten-free, substitute soy sauce with tamari or coconut aminos.’, ‘Peach ripeness affects sweetness; add a teaspoon of brown sugar or honey to peach slices if underripe.’]
