  • 1 pound potato gnocchi (store-bought or homemade)
  • 4 cups fresh baby spinach (or regular spinach, chopped)
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add gnocchi and cook according to package instructions (usually 2-3 minutes). Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add spinach to the skillet and cook until wilted, stirring frequently, about 2-3 minutes.
  4. Push spinach to one side of the skillet. Add another drizzle of olive oil and the cooked gnocchi. Let them sear for 2-3 minutes until lightly golden.
  5. Sprinkle crumbled feta evenly over the gnocchi and spinach. Season with salt, pepper, and red pepper flakes (if using). Toss gently to combine.
  6. Serve immediately while the feta is creamy and melty.

Notes

Serve immediately for the best texture and flavor. If gnocchi sticks to the skillet, add a splash of water or broth to loosen it up.
