  • 2 cups cooked and mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup melted unsalted butter
  • 2 large eggs, room temperature
  • 1/2 cup whole milk or evaporated milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Pinch of salt
  • 1 pre-made or homemade pie crust
  • 2 cups mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and place the rack in the center.
  2. Peel, boil, and mash the sweet potatoes until smooth. You’ll need about 2 cups.
  3. In a large bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, melted butter, eggs, milk, vanilla extract, cinnamon, nutmeg, and salt. Blend until smooth using a hand mixer or whisk.
  4. Roll out your pie crust and fit it into a 9-inch pie pan. Crimp the edges for a decorative touch if desired.
  5. Pour the sweet potato mixture into the crust, spreading it evenly with a spatula.
  6. Place the pie on the center rack and bake for 45-50 minutes, or until the filling is set and the edges are slightly puffed.
  7. Remove the pie from the oven and arrange mini marshmallows on top. Return to the oven and broil for 1-2 minutes, watching closely, until the marshmallows are golden brown.
  8. Let the pie cool for at least 30 minutes before serving.
