Tender Slow Cooker Corned Beef Brisket with Mustard Glaze

  • 3 to 4 pounds corned beef brisket (with spice packet included)
  • 1/3 cup yellow mustard (smooth or coarse)
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon apple cider vinegar
  • 3 garlic cloves, minced
  • 1 medium onion, sliced
  • 3 large carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and quartered (Yukon Gold recommended)
  • 2 cups low sodium beef broth
  • 2 tablespoons pickling spices (from packet or mix of mustard seeds, peppercorns, bay leaves)
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Peel and chop the carrots and potatoes into large chunks. Slice the onion into rings or half-rings (about 10 minutes).
  2. Spread the carrots, potatoes, and onion evenly across the bottom of the slow cooker.
  3. Rinse the corned beef brisket under cold water to remove excess salt and pat dry with paper towels.
  4. Place the brisket fat side up on top of the vegetables. Sprinkle pickling spices over the brisket and vegetables.
  5. Pour 2 cups of beef broth around the edges of the slow cooker, avoiding pouring directly on the brisket.
  6. Cover and cook on low for 8 to 10 hours until the brisket is fork-tender.
  7. About 1 hour before cooking ends, mix yellow mustard, brown sugar, apple cider vinegar, and minced garlic in a bowl to make the glaze.
  8. Remove the lid carefully, brush the mustard glaze evenly over the top of the brisket, replace the lid, and cook for the remaining hour.
  9. Check for doneness; if not tender enough, cook an additional 30 minutes to 1 hour as needed.
  10. Remove the brisket, let it rest for 10 minutes, then slice against the grain and serve with cooked vegetables.

Notes

Rinse the brisket before cooking to reduce saltiness. Apply mustard glaze during the last hour to prevent burning and create a flavorful crust. If glaze thickens too much, add a splash of broth and stir gently. Rest the meat after cooking for juicy slices. Use a sharp knife to slice against the grain. Variations include adding hot mustard or cayenne for spice, fresh herbs for aroma, or Guinness beer in broth for richer flavor.
