This Vegan Mushroom Wellington features a crisp, golden puff pastry and a savory mushroom filling, making it the ultimate showstopper for any occasion.

  • 1 sheet vegan-friendly puff pastry
  • 16 oz cremini mushrooms, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach, wilted and drained
  • 1/2 cup bread crumbs (use gluten-free if needed)
  • 2 tbsp balsamic vinegar
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp plant-based milk for brushing

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until fragrant, about 3 minutes.
  2. Stir in the cremini mushrooms, cooking until softened and most of the liquid has evaporated, about 8-10 minutes.
  3. Add balsamic vinegar, thyme, salt, and pepper. Stir well to combine. Remove from heat and let cool.
  4. In the same skillet, cook the spinach until just wilted. Drain any excess liquid and mix the spinach into the mushroom filling.
  5. Stir breadcrumbs into the filling mixture to help bind it. Taste and adjust seasoning if necessary.
  6. On a lightly floured surface, roll out your puff pastry into a rectangle large enough to encase the filling.
  7. Spoon the mushroom filling onto the center of the pastry, shaping it into a log. Fold the pastry over the filling, sealing the edges with a little water.
  8. Use a knife to score the top of the pastry lightly. Brush with plant-based milk.
  9. Preheat the oven to 400°F (200°C). Place your Wellington on a parchment-lined baking sheet and bake for 25-30 minutes, or until golden brown.
  10. Let the Wellington cool for 5 minutes before slicing and serving warm.
