  • 3/4 cup (165g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (170g) white chocolate chips
  • 1/2 cup (80g) crushed peppermint candies
  • 1 cup (50g) broken pretzel pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, cream together 1 cup (226g) of softened unsalted butter, 3/4 cup (150g) granulated sugar, and 3/4 cup (165g) brown sugar using an electric mixer. Beat until light and fluffy, about 2-3 minutes.
  3. Add 1 large egg and 1 teaspoon of vanilla extract to the bowl. Beat until fully incorporated.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep your cookies tender.
  6. Fold in 1 cup (170g) white chocolate chips, 1/2 cup (80g) crushed peppermint candies, and 1 cup (50g) broken pretzel pieces using a rubber spatula.
  7. Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden. The centers may look slightly undercooked—don’t worry, they’ll set as they cool.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
