  • 4 cloves garlic, minced

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Red pepper flakes, optional
  • Green onions, sliced for garnish

Instructions

  1. Pat chicken thighs dry with paper towels and place them in the bottom of a slow cooker.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until the honey is dissolved.
  3. Pour the sauce over the chicken and use tongs to toss, ensuring each piece is evenly coated.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken reaches an internal temperature of 165°F (74°C).
  5. Remove chicken from the slow cooker and set aside on a plate.
  6. In a small bowl, mix cornstarch and cold water to create a slurry.
  7. Stir the slurry into the hot sauce in the slow cooker.
  8. Cover and cook on high for an additional 15-20 minutes until the sauce thickens to a glaze consistency.
  9. Return chicken to the pot, tossing to coat in the thickened sauce.
  10. Garnish with green onions and red pepper flakes. Serve immediately over rice or noodles.

Notes

Use fresh ginger for best flavor. Ensure cornstarch is mixed with cold water to prevent clumping. Do not overcrowd the slow cooker; cook in batches if using more than 2 lbs of chicken. For a spicy version, add gochujang or sriracha.
