  • 8 oz Chipotle Pepper Jack Cheese, cut into triangles or cubes
  • 1 pack Smoked Paprika Crackers (e.g., Mattoe’s)
  • 1 jar Roasted Red Peppers, drained and cut into strips
  • 1 small jar Whole Grain Mustard
  • 1 bag Pretzel Rods or Twists
  • 1 jar Dill Pickle Spears
  • 1/2 cup Marcona Almonds, lightly toasted
  • Fresh Herbs (Parsley or Thyme) for garnish

Instructions

  1. Clean the wooden board with a damp cloth and dry thoroughly. Lightly sketch the outline of a football in the center and draw faint curved lines for laces using a washable marker.
  2. Place the Smoked Gouda and Chipotle Pepper Jack cheeses at the ends of the football shape. Arrange Gouda in cubes and Pepper Jack in triangles to create the ‘ends’ of the football.
  3. Slice the smoked sausage into half-moons and arrange them in a fan shape along the sides of the football shape, placing meats next to the cheeses.
  4. Use pretzel rods to create horizontal ‘yard lines’ across the football shape, spacing them evenly. Alternatively, place pickle spears along the outer edge to define the shape.
  5. Fill in the gaps by placing roasted red pepper strips in the center, Marcona almonds in clusters around the edges, and tucking crackers into empty spaces.
  6. Place small bowls of whole grain mustard and olives at the ends of the football. Sprinkle smoked paprika over crackers and garnish with fresh parsley or thyme.
  7. Step back and adjust any items for balance and accessibility. Serve at room temperature.
