  • 1/2 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt (or to taste)
  • Black pepper to taste
  • 1 large avocado, diced (optional, added before serving)
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Rinse the black beans thoroughly under cold water in a colander to remove starchy liquid and shake to dry.
  2. Finely dice the red bell pepper, red onion, and jalapeños. Mince the garlic and chop the cilantro.
  3. In a medium mixing bowl, combine the drained black beans, white corn, diced red bell pepper, red onion, and jalapeños.
  4. In a small jar or bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, cumin, chili powder, salt, and black pepper until emulsified.
  5. Pour the dressing over the vegetable and bean mixture and fold gently with a spatula to coat evenly. Taste and adjust seasoning if needed.
  6. Fold in the chopped fresh cilantro.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Just before serving, dice the avocado and fold it in. Add feta cheese if using, and give one final gentle toss.
