  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • 1 tsp Kosher Salt
  • 1 cup (245g) Pumpkin Puree
  • ½ cup (113g) Unsalted Butter, softened
  • ½ cup (120ml) Vegetable Oil
  • 2 Large Eggs, room temperature
  • ¾ cup (150g) Granulated Sugar
  • ¾ cup (150g) Brown Sugar, packed
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Vanilla Extract
  • 1 cup (170g) Chocolate Chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice until combined.
  3. In a separate medium bowl, beat the softened butter and both sugars together until light and fluffy (about 2-3 minutes).
  4. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and pumpkin puree, mixing until just combined.
  5. Whisk the vegetable oil into the pumpkin mixture until smooth.
  6. Pour the wet ingredients into the dry ingredients. Fold together with a spatula until no streaks of flour remain; do not overmix.
  7. Gently fold in the chocolate chips.
  8. Grease a 12-cup muffin tin or line with paper liners. Scoop batter into cups, filling them about ¾ full.
  9. Bake for 20-25 minutes, or until tops are golden brown and a toothpick inserted into the center comes out with moist crumbs.
  10. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Ensure baking soda is fresh for proper rise. Do not overmix the batter to maintain a chewy texture. For best results, use room temperature ingredients. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
