  • 1/2 cup (100g) granulated sugar (for batter)

  • 1 large egg, room temperature
  • 1/2 cup (120ml) milk (whole, 2%, or almond)
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced (e.g., Granny Smith and Fuji)
  • 1 teaspoon flour (for tossing apples)
  • 1/2 cup (100g) granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)
  • 2 tablespoons unsalted butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, 1/2 cup sugar, and 1 tablespoon cinnamon until no lumps remain.
  3. In a separate bowl or large measuring cup, whisk the melted butter, egg, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix; the batter will be thick and lumpy.
  5. Peel and dice apples into bite-sized cubes. Toss them in a small bowl with 1 teaspoon of flour to prevent sinking.
  6. Gently fold the apple cubes into the batter.
  7. Pour batter into the prepared loaf pan and smooth the top. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. While baking, mix the topping sugar and cinnamon in a small bowl. Melt the 2 tablespoons of butter.
  9. As soon as the bread is done, brush the top generously with melted butter and immediately sprinkle the cinnamon-sugar mixture over it.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Tossing apples in flour prevents them from sinking. Do not overmix the batter to ensure a tender crumb. If the top browns too quickly, cover loosely with foil after 30 minutes. For gluten-free, use a 1-to-1 baking flour blend. For dairy-free, use plant-based butter and milk.
