A refreshing, creamy, and vibrant pink drink made with coconut milk, freeze-dried strawberries, and a hint of coffee. This homemade version is quick, healthy, and avoids artificial ingredients.

  • 1/4 cup freeze-dried strawberries
  • 1/2 cup warm water (for rehydrating strawberries)
  • 12 tablespoons simple syrup (adjust to taste)
  • 12 tablespoons green coffee extract or cold brew concentrate
  • 1 cup ice
  • Splash of lemon juice (optional, for tartness)
  • Fresh mint leaves or strawberry slices (for garnish)

Instructions

  1. Crush the freeze-dried strawberries slightly and place them in a bowl. Pour warm water over them and let sit for 10 minutes until plumped and the water turns pink.
  2. Strain the pink liquid into a separate bowl, reserving the liquid. Save the rehydrated strawberries for garnish or eating, or discard solids for a smoother texture.
  3. In a blender, combine the coconut milk, strained pink strawberry water, coffee extract, and simple syrup.
  4. Add 1 cup of ice to the blender.
  5. Blend on high until the ice is crushed and the mixture is frothy and uniform in color.
  6. Taste and adjust sweetness or tartness with more syrup or lemon juice if needed.
  7. Pour into tall glasses filled with fresh ice. Garnish with mint or strawberry slices and serve immediately.

Notes

Use canned coconut milk, not carton milk, for the best creamy texture. Shake the can well before opening. For a non-watery drink, freeze coconut milk into ice cubes and use those instead of regular ice. If using fresh strawberries, mash and strain them, though flavor will be milder. Best served immediately.
