  • 67 medium apples (about 2.5 lbs), peeled, cored, and sliced (mix of Honeycrisp and Granny Smith)
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons bourbon
  • 1 cup all-purpose flour (for topping)
  • 1 cup old-fashioned rolled oats
  • 1 cup packed brown sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine sliced apples, granulated sugar, 1/2 cup brown sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
  3. Pour bourbon over the apple mixture and toss again until glossy.
  4. Transfer the apple mixture to a 9×13 inch baking dish and spread evenly.
  5. In a medium bowl, whisk together 1 cup flour, rolled oats, 1 cup brown sugar, 1 teaspoon cinnamon, and salt.
  6. Add cold cubed butter to the dry ingredients. Use a pastry cutter or fingers to work the butter in until the mixture resembles coarse crumbs with pea-sized clumps.
  7. Sprinkle the topping evenly over the apples. Press down gently in a few spots.
  8. Bake for 45-50 minutes until the topping is golden brown and juices are bubbling. If edges brown too quickly, cover with foil.
  9. Let cool for at least 15 minutes before serving to allow filling to thicken.

Notes

Keep butter cold for a flaky topping. Let the crisp rest for 15-20 minutes after baking to thicken the filling. For gluten-free, use GF flour blend and certified GF oats. For dairy-free, use vegan butter. Substitute bourbon with apple cider if preferred.
