  • 1 large yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves fresh garlic, minced
  • 1 teaspoon dried thyme
  • 12 bay leaves
  • 1 cup wild rice (or a blend of wild and brown rice)
  • 64 ounces (2 cartons) low-sodium chicken broth
  • 2 boneless, skinless chicken breasts or thighs
  • 1/2 cup heavy cream
  • Salt and black pepper, to taste

Instructions

  1. Heat butter in a large Dutch oven or stockpot over medium heat. Add onion, carrots, and celery; sauté for 5 minutes until softened.
  2. Add garlic, thyme, and bay leaves; stir constantly for 1 minute until fragrant.
  3. Add the wild rice to the pot and stir to coat in the butter and vegetables; toast for 2 minutes.
  4. Pour in the chicken broth and add the raw chicken breasts. Ensure chicken is mostly submerged.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes until rice is tender and chicken is cooked through.
  6. Remove chicken from the pot and shred into bite-sized pieces using two forks. Discard bay leaves.
  7. Return shredded chicken to the pot and stir in heavy cream. Simmer for 5 minutes to heat through and meld flavors.
  8. Season with salt and pepper to taste. Serve hot with crusty bread.

Notes

Wild rice takes longer to cook than white rice, so do not rush the simmer. For a lighter version, use half-and-half instead of heavy cream. If using leftover rotisserie chicken, add it in the last 5 minutes just to heat through. The soup can be frozen for up to 3 months, though the rice may soften upon thawing.
