  • 1 medium butternut or acorn squash, peeled and cubed into 1-inch pieces
  • 2 cups chopped kale or spinach
  • 1/2 cup raw or toasted walnuts
  • 1/4 cup crumbled feta or goat cheese
  • 2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Toss squash cubes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
  3. Roast squash for 25-30 minutes until edges are browned and centers are tender.
  4. While squash roasts, toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Set aside to cool.
  5. In a small bowl, whisk together remaining 1 tablespoon olive oil, apple cider vinegar, honey, minced garlic, salt, and pepper until emulsified.
  6. Wash and chop greens. If using kale, remove tough stems.
  7. Place greens in a large serving bowl. Add warm roasted squash, crumbled cheese, and toasted walnuts.
  8. Drizzle vinaigrette over the salad and toss gently to combine. Serve immediately.

For best results, do not overcrowd the baking sheet to ensure the squash roasts rather than steams. Toast walnuts carefully as they burn quickly. If meal prepping, store components separately and assemble just before eating to maintain texture. For a dairy-free option, omit cheese or use a vegan crumble.
