  • 4 large russet potatoes
  • 1 whole head of garlic
  • 1/2 cup unsalted butter, cut into cubes
  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup heavy cream
  • 2 extra garlic cloves, minced
  • 2 tablespoons butter (for herb butter)
  • 1/4 cup fresh chives, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • Kosher salt and black pepper to taste
  • 1/2 cup shredded cheddar or gruyere cheese (optional topping)

Instructions

  1. Preheat oven to 400°F (200°C). Peel potatoes and cut into 2-inch chunks. Place in a large pot and cover with cold salted water.
  2. Trim the top off the garlic head to expose cloves. Drizzle with olive oil, wrap loosely in foil, and roast in the oven for 40-45 minutes until soft and golden.
  3. Bring the potato water to a boil, then reduce to a simmer. Cook potatoes for 15-20 minutes until tender. Drain well and let sit in the colander for 2 minutes to steam off excess water.
  4. In a small saucepan, melt 2 tablespoons of butter with the 2 extra minced garlic cloves. Cook gently for 2 minutes until fragrant but not browned.
  5. Return drained potatoes to the warm pot. Use a ricer or masher to break them down. Add softened cream cheese, remaining butter, and heavy cream. Fold gently until combined.
  6. Stir in the herb butter, salt, and pepper. Squeeze the roasted garlic cloves from their skins into the mash and fold until evenly distributed. Taste and adjust seasoning.
  7. Transfer mixture to a greased 9×13 casserole dish. Smooth the top and sprinkle with cheese if using. Bake at 350°F (175°C) for 20-25 minutes until edges are bubbly and top is lightly golden.
  8. Remove from oven and sprinkle with fresh chives and parsley. Let rest for 5 minutes before serving.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. Do not use electric mixers or food processors as they can make the potatoes gummy. Warm the cream and butter before mixing to maintain texture. For a crispier top, broil for the last 2-3 minutes of baking.
