Cozy Healthy Turkey Chili: Easy 1-Bone Meal

A thick, hearty, and healthy turkey chili that uses lean ground turkey and black beans for a substantial meal. This recipe focuses on technique to achieve a rich texture without needing hours of simmering or thickeners.

  • 1.5 lbs ground turkey (93% lean)
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 large yellow onion, diced
  • 1 large bell pepper, diced
  • 4 cloves garlic, minced
  • 1 medium jalapeño, finely diced (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • Salt and black pepper to taste

Instructions

  1. Dice the onion and bell pepper. Mince the garlic and jalapeño. Rinse and drain the black beans.
  2. Heat olive oil in a large heavy-bottomed pot over medium-high heat. Add onion and bell pepper; sauté for 5 minutes until soft.
  3. Add garlic and jalapeño; cook for 1 minute until fragrant.
  4. Increase heat to medium-high. Add ground turkey, breaking it up with a spoon. Brown for 7-10 minutes until no longer pink. Drain excess liquid if necessary.
  5. Reduce heat to medium. Add cumin, smoked paprika, and chili powder. Stir and cook for 30-60 seconds to bloom the spices.
  6. Add tomato paste and stir for 1 minute. Add crushed tomatoes, black beans, and chicken broth. Stir to combine and scrape the bottom of the pot.
  7. Bring to a boil, then reduce heat to low. Cover with lid slightly ajar and simmer for 30-45 minutes, stirring occasionally, until thickened.
  8. Season with salt and black pepper to taste. Let sit for 5 minutes before serving.

Notes

For a thicker chili, mash some beans against the side of the pot before adding tomatoes. If using a slow cooker, brown turkey and veggies first, then cook on low for 6-8 hours. Add beans and tomatoes in the last hour. Ensure spices are bloomed in fat for maximum flavor.
