  • 1 cup Powdered Sugar (for dusting)

  • 4 cups Whole Milk

  • 1/4 to 1/2 cup Sugar (for cocoa)
  • 1 cup Semi-Sweet Chocolate Chips

Instructions

  1. Bloom the gelatin: In the bowl of a stand mixer, sprinkle gelatin powder over ice water and let sit for 5-10 minutes until spongy.
  2. Make the sugar syrup: In a small saucepan, combine granulated sugar, corn syrup, and 1/2 cup water. Stir over medium heat until dissolved, then stop stirring and boil until the mixture reaches 240°F (soft ball stage) on a candy thermometer.
  3. Whip the gelatin: Turn the mixer to medium-high speed and whip the bloomed gelatin for a minute to smooth it out.
  4. Pour the syrup: Slowly pour the hot sugar syrup into the gelatin mixture in a thin stream, avoiding the beaters. Keep the mixer on medium-high.
  5. Whip until cool: Let the mixer run on high for 10-15 minutes until the mixture is white, glossy, doubled in volume, and cool to the touch.
  6. Add vanilla: Turn mixer to low and add vanilla extract and salt. Mix for 30 seconds to combine.
  7. Prepare the pan: Line a 9×13 inch pan with parchment paper. Sprinkle a mixture of powdered sugar and cornstarch evenly over the bottom and sides.
  8. Pour and set: Pour the marshmallow mixture into the prepared pan. Smooth the top with a wet spatula. Let sit at room temperature for at least 4 hours or overnight until firm.
  9. Cut and dust: Lift the slab out of the pan. Dust the top with more powdered sugar/cornstarch mix. Cut into squares and toss to coat all sides.
  10. Make the hot cocoa: Heat milk in a saucepan over medium heat until steaming. Whisk in cocoa powder and sugar until dissolved. Stir in chocolate chips until melted.
  11. Serve: Pour hot cocoa into mugs and top with homemade marshmallows and desired toppings.

Notes

Ensure the sugar syrup reaches exactly 240°F for the right texture. If the kitchen is humid, add extra cornstarch to the dusting mix. Do not boil the milk for the cocoa to avoid scalding. Marshmallows can be stored in an airtight container for up to two weeks or frozen for up to three months.
