A quick and comforting twist on traditional lasagna, this soup delivers rich, cheesy, herby flavors in under 30 minutes. It features tender noodles, a savory tomato broth, and a creamy ricotta dollop for the ultimate weeknight meal.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans tomato sauce
  • 1 (15-ounce) can crushed tomatoes
  • 1 (32-ounce) carton chicken or vegetable broth (low-sodium)
  • 1 package lasagna noodles, broken into pieces
  • 1 cup whole-milk ricotta cheese
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon dried basil
  • Pinch of red pepper flakes
  • Salt and black pepper to taste
  • 1 tablespoon milk or cream (for ricotta dollop)
  • Optional: Parmesan cheese for ricotta dollop

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef or sausage, breaking it up with a spoon. Brown the meat thoroughly, then drain excess grease if necessary. Season with salt and pepper.
  2. Reduce heat to medium. Add diced onion and cook until soft and translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Stir in Italian seasoning, dried basil, and red pepper flakes. Toast for 1 minute, then add tomato sauce and crushed tomatoes. Stir to combine and let simmer briefly.
  4. Pour in the broth and bring to a boil. Add broken lasagna noodles, ensuring they are submerged. Reduce heat to a gentle simmer, cover loosely, and cook for 10-12 minutes until noodles are tender.
  5. While soup simmers, mix ricotta cheese with milk or cream, a pinch of salt, and optional parmesan in a small bowl until smooth and creamy.
  6. Taste the soup and adjust seasoning with more salt or pepper if needed. Ladle hot soup into bowls and top each with a generous dollop of the seasoned ricotta. Serve immediately.

Notes

Stir noodles occasionally to prevent sticking. If using no-boil noodles, add an extra cup of broth and simmer longer. The ricotta dollop should be added right before serving to maintain texture. Leftovers thicken in the fridge; add broth when reheating. Noodles may become mushy if frozen; undercook slightly if planning to freeze.
