Ingredients

Scale
  • 1 cup canned pumpkin puree (100% pure)
  • 2 tablespoons real maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 wheel Brie cheese (approx. 8 oz)
  • Crackers (water crackers or seeded crackers)
  • Salty nuts (walnuts or pecans, toasted)
  • Dried fruit (apricots or figs)
  • Apples (Honeycrisp or Granny Smith, sliced thin)
  • Grapes (red or green, whole)
  • Cherry tomatoes (optional)
  • Lemon juice (optional, to prevent browning)

Instructions

  1. Remove Brie from the refrigerator 30 minutes before serving to bring to room temperature.
  2. In a small bowl, mix pumpkin puree, maple syrup, pumpkin pie spice, and vanilla until smooth to create pumpkin butter.
  3. Slice apples into thin wedges. If concerned about browning, toss lightly with lemon juice.
  4. Toast nuts in a dry skillet over medium heat for 3-4 minutes until fragrant, then let cool.
  5. Place the wheel of Brie in the center of a large board or platter.
  6. Arrange crackers in a fan shape or pile on one side of the board.
  7. Scatter grapes and apple slices around the Brie.
  8. Fill gaps with dried fruit and toasted nuts.
  9. Spoon pumpkin butter into small bowls or ramekins and place strategically on the board.
  10. Drizzle a little extra maple syrup over the Brie and pumpkin butter bowls for shine and flavor.

Notes

Room temperature cheese is essential for flavor and texture. Do not use pumpkin pie filling; use 100% pure pumpkin puree. The board is best eaten within 2-3 hours of assembly. Leftover pumpkin butter can be stored in the fridge for up to a week.
