A simple yet delicious fall dessert where pumpkin puree, cake mix, and a crunchy pecan streusel topping are layered and baked together for a moist, caramelized treat.

Ingredients

Scale
  • 15 oz can 100% pure pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil (or melted butter)
  • 2 large eggs, room temperature
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 box (15.25 oz) yellow or spice cake mix
  • 1/2 cup milk
  • 1 cup pecan halves, roughly chopped
  • 1/2 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13 inch baking dish.
  2. In a medium bowl, whisk together pumpkin puree, granulated sugar, vegetable oil, eggs, pumpkin pie spice, and salt until smooth.
  3. Pour the pumpkin mixture into the bottom of the baking dish and spread evenly.
  4. Sprinkle the entire box of dry cake mix evenly over the pumpkin layer. Do not stir.
  5. In a separate small bowl, combine chopped pecans, brown sugar, flour, cinnamon, and melted butter until the mixture resembles wet sand.
  6. Sprinkle the pecan streusel evenly over the dry cake mix layer and press down gently.
  7. Bake for 45 to 50 minutes until the top is golden brown and bubbles form around the edges.
  8. Let the cake cool for at least 15 minutes before serving to allow layers to set.

Notes

Do not use pumpkin pie mix; use 100% pure pumpkin puree. Toasting pecans beforehand enhances flavor. If the top browns too quickly, tent with aluminum foil. Let cool for 15 minutes to ensure clean slicing.
