  • 8 ounces cream cheese, softened
  • 1 cup light lager or amber ale
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon hot sauce (optional)
  • 1/4 teaspoon black pepper, freshly cracked

Instructions

  1. Shred the sharp cheddar cheese finely and set aside. Cut the softened cream cheese into small cubes.
  2. In a medium-sized saucepan, melt the butter over medium-low heat until bubbly but not browned.
  3. Pour in the beer and stir to combine with the butter. Simmer for 3-4 minutes to reduce slightly and cook off the alcohol.
  4. Add the cream cheese cubes to the beer mixture. Stir constantly until the cream cheese is completely melted and smooth.
  5. Reduce heat to low. Gradually add the shredded cheddar cheese, a handful at a time, stirring until each addition melts before adding more.
  6. Stir in the garlic powder, onion powder, Dijon mustard, hot sauce, and black pepper.
  7. Simmer on low heat for 2-3 minutes until the dip thickens slightly and becomes glossy. Remove from heat.
  8. Serve immediately warm with crackers, pretzels, or sliced baguette.

Notes

Avoid using pre-shredded cheese as the anti-caking agents can prevent smooth melting. Keep heat low to prevent the cheese from separating or becoming grainy. If the dip is too thick, add a splash of beer; if too thin, cook longer. Can be kept warm in a slow cooker on low for serving.
