  • 4 oz (115g) cream cheese, softened
  • 2 tablespoons sugar (for swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Melt butter in a light-colored saucepan over medium heat. Cook until amber-colored and nutty, then pour into a heat-safe bowl to cool for 10 minutes.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cardamom.
  4. In a large bowl, whisk cooled brown butter, vegetable oil, granulated sugar, and brown sugar vigorously for 2 minutes.
  5. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract and pumpkin puree.
  6. Fold dry ingredients into wet ingredients using a rubber spatula until just combined.
  7. In a small bowl, mix softened cream cheese, 2 tablespoons sugar, and 1 egg yolk until smooth.
  8. Pour half the batter into the pan. Dollop cream cheese mixture on top and swirl gently. Top with remaining batter and swirl again.
  9. Bake for 55-65 minutes until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
