A quick and easy 5-ingredient creamy buffalo chicken dip made with rotisserie chicken, cream cheese, hot sauce, and ranch seasoning. Perfect for game day or a last-minute snack.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 2 tablespoons dry ranch dressing mix (or homemade blend of dried dill, parsley, garlic powder, onion powder, and buttermilk powder)
  • 2 cups shredded rotisserie chicken
  • 1 cup shredded low-moisture mozzarella cheese
  • 1/4 cup ranch dressing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut cream cheese into cubes and place in a large mixing bowl. Add hot sauce and dry ranch seasoning.
  3. Beat with a hand mixer on medium speed for 2-3 minutes, or stir vigorously with a spoon, until the mixture is completely smooth and lump-free.
  4. Fold in the shredded rotisserie chicken and stir in the 1/4 cup ranch dressing until evenly combined.
  5. Spread the mixture evenly into an 8-inch square baking dish or ramekin.
  6. Sprinkle the shredded mozzarella cheese over the top to cover the entire surface.
  7. Bake for 15 minutes, or until the cheese is melted and bubbly and edges are slightly golden.
  8. Optional: Switch oven to broil for the last 2 minutes to crisp the cheese, watching closely to prevent burning.
  9. Remove from oven and let cool for 5 minutes before serving to allow the dip to thicken.

Notes

Ensure cream cheese is fully softened to avoid lumps. Shredding your own mozzarella ensures a smoother melt compared to pre-shredded cheese. If the dip is too thick after baking, stir in a tablespoon of milk or more ranch dressing. Do not freeze this dip as the texture may become grainy.
