A quick and easy creamy buffalo chicken dip made with rotisserie chicken, cream cheese, hot sauce, and blue cheese dressing, finished with a cool ranch drizzle. Perfect for game day or last-minute snacking.

  • 8 ounces full-fat cream cheese, softened and cubed
  • 2 tablespoons unsalted butter
  • 1/2 cup Frank’s RedHot sauce
  • 1/4 cup creamy blue cheese dressing
  • 1 cup sharp cheddar cheese, freshly shredded
  • 2 cups cooked rotisserie chicken, shredded
  • 1/2 teaspoon garlic powder
  • 23 tablespoons creamy ranch dressing
  • Splash of milk (for thinning ranch)

Instructions

  1. Shred the rotisserie chicken and set aside.
  2. Place a medium skillet over medium-low heat and melt the butter slowly without browning.
  3. Add the cubed cream cheese to the melted butter and stir constantly until it breaks down into a smooth, lump-free paste (about 3-4 minutes).
  4. Stir in the hot sauce, blue cheese dressing, and garlic powder until well combined.
  5. Add the shredded cheddar cheese and chicken, stirring gently until the cheese melts and everything is coated.
  6. Remove from heat and let sit for a minute to thicken.
  7. Mix ranch dressing with a splash of milk to reach a drizzling consistency.
  8. Drizzle the ranch over the top of the warm dip and serve immediately with tortilla chips or vegetables.

Notes

Use room temperature cream cheese for smoother melting. Avoid pre-shredded cheese as anti-caking agents can make the dip grainy. Do not freeze this dip as the dairy will separate. Serve with sturdy tortilla chips, celery sticks, or carrot sticks.
