A rich, velvety slow-cooker chili featuring tender shredded chicken, white beans, and a creamy broth made with cream cheese and green chilies. This low-effort, high-reward meal is perfect for cozy nights.

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (15 oz) Great Northern beans or Cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 8 ounces full-fat cream cheese, cubed
  • 1/2 cup full-fat sour cream
  • 2 cups low-sodium chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Place chicken breasts at the bottom of the slow cooker. If large, cut in half to fit in a single layer. Season lightly with salt and pepper.
  2. Pour chicken broth over the chicken. Add the drained white beans and the can of green chilies (including the juice).
  3. Sprinkle cumin, oregano, and garlic powder over everything. Stir gently to distribute spices.
  4. Cover and cook on LOW for 6 hours or HIGH for 4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from the pot. Use two forks to shred the meat into bite-sized pieces. Discard any large fat pieces.
  6. Return shredded chicken to the pot. Add cubed cream cheese and stir constantly until melted and incorporated into the broth.
  7. Turn off the slow cooker. Stir in the sour cream. Taste and adjust salt if needed.
  8. Serve hot, topped with shredded Monterey Jack cheese, chopped cilantro, and crushed tortilla chips.

Notes

Do not use low-fat cream cheese as it may not melt properly and can result in a grainy texture. Add sour cream only after turning off the heat to prevent splitting. If the chili is too thin, cook uncovered on HIGH for the last hour. If too thick, add more broth.
