A rich, custard-like breakfast casserole featuring diced ham and sharp cheddar cheese baked in a creamy egg mixture. It is simple to prepare, gluten-free, and perfect for brunch or meal prep.

Ingredients

Scale
  • 8 large eggs, room temperature
  • 1 to 1.5 cups diced ham (honey-glazed or leftover spiral ham)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • Salt and black pepper to taste
  • Pinch of nutmeg
  • Non-stick cooking spray or butter for greasing dish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  3. Dice the ham into bite-sized pieces.
  4. Shred the cheddar cheese if using a block.
  5. In a large bowl, whisk 8 eggs vigorously until frothy.
  6. Add milk, melted butter, salt, pepper, and nutmeg to the eggs; whisk until combined.
  7. Place ham and cheese in the prepared baking dish.
  8. Pour the egg mixture over the ham and cheese, folding gently to distribute evenly.
  9. Let the mixture rest at room temperature for 10 minutes.
  10. Bake for 35-40 minutes until edges are golden and center is set but slightly jiggly.
  11. Cool for 5-10 minutes before slicing and serving warm.

Notes

Ensure ingredients are at room temperature for even cooking. Do not overcook; the center should be slightly jiggly as it will firm up while cooling. For a crispier top, broil for the last 1-2 minutes. Sauté any added vegetables beforehand to prevent excess moisture.
