  • 3 large English cucumbers, sliced into thin half-moons
  • 1 medium red onion, sliced very thinly
  • 1/2 cup fresh dill, packed and chopped
  • 1 cup full-fat sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Wash cucumbers and slice them into thin half-moons (about 1/8 inch thick). Place in a large mixing bowl.
  2. Peel and thinly slice the red onion. If the onion is strong, soak slices in cold water for 5 minutes to mellow the bite, then drain and pat dry. Add to the bowl with cucumbers.
  3. In a medium bowl, whisk together sour cream, mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth and creamy.
  4. Pour the dressing over the cucumber and onion mixture. Gently fold everything together using a rubber spatula to coat evenly without crushing the vegetables.
  5. Add the chopped fresh dill and fold it in last.
  6. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes, ideally 30 minutes, to allow flavors to meld.
  7. Before serving, give the salad a final stir to reincorporate any liquid that has settled at the bottom. Taste and adjust seasoning if needed. Serve chilled.

Notes

For a lower-calorie option, substitute Greek yogurt for sour cream. If using standard cucumbers instead of English cucumbers, peel them and scoop out the seeds to prevent sogginess. The salad can be made up to 24 hours in advance, but texture will soften over time. Do not freeze.
