Creamy Grilled Peach and Burrata Flatbread

A quick and elegant summer appetizer featuring charred peaches, fresh burrata cheese, and basil on crispy flatbread, finished with balsamic glaze.

Ingredients

  • Flatbread dough or store-bought flatbreads
  • Ripe peaches, halved and pitted
  • High-quality extra virgin olive oil
  • Fresh burrata cheese
  • Fresh basil leaves
  • Balsamic vinegar or glaze
  • Flaky sea salt
  • Black pepper

Instructions

  1. Preheat grill to medium-high heat or oven to 450°F (230°C).
  2. Wash peaches, slice in half, remove pits, and toss gently with 1 tablespoon olive oil and a pinch of salt.
  3. Grill peaches cut-side down for 2-3 minutes until charred, then flip and grill for 1-2 minutes more. Remove to a plate.
  4. Brush flatbreads with olive oil and bake or grill until golden and crispy, about 3-5 minutes.
  5. Tear burrata into chunks and distribute over the warm flatbread immediately after removing from heat.
  6. Arrange grilled peaches on top of the cheese.
  7. Drizzle with balsamic glaze, tear fresh basil over the top, and finish with black pepper and flaky sea salt.
  8. Slice and serve immediately.

Notes

Do not over-grill the peaches; they should be charred but hold their shape. Take burrata out of the fridge 15-20 minutes before assembling to allow it to soften slightly. Serve immediately to prevent the flatbread from getting soggy.
