Creamy Lazy Girl Crockpot Beef Stroganoff

A quick and easy slow cooker beef stroganoff that requires minimal active time. By cooking egg noodles directly in the pot with the beef and broth, this recipe creates a thick, creamy sauce without the fuss of traditional methods.

  • 23 pounds beef chuck roast, trimmed and cut into 1-inch cubes
  • 1 packet onion soup mix (e.g., Lipton)
  • 1 cup beef broth (low-sodium recommended)
  • 8 ounces dried wide egg noodles
  • 1 cup full-fat sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard (optional)
  • 2 tablespoons butter (optional, for finishing)
  • Black pepper to taste

Instructions

  1. Cube the beef chuck roast into 1-inch pieces and place them in the bottom of a 4- to 6-quart slow cooker.
  2. Sprinkle the entire packet of onion soup mix and garlic powder over the beef. Toss gently to coat.
  3. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to dissolve the soup mix.
  4. Break the dried egg noodles in half if necessary and scatter them over the top of the beef mixture. Do not stir yet.
  5. Cover and cook on Low for 6 to 7 hours, or on High for 3 to 4 hours, until beef and noodles are tender.
  6. Turn the slow cooker to ‘Warm’ and let it rest for 10 minutes to allow the sauce to thicken.
  7. Temper the sour cream by stirring a cup of hot cooking liquid into it in a separate bowl, then pour it back into the slow cooker.
  8. Stir gently until combined. Add butter if using, and season with black pepper and salt to taste.
  9. Serve immediately.

Notes

Do not skip tempering the sour cream to prevent curdling. If the sauce is too thick, add a splash of broth. If too thin, cook uncovered on High for 30 minutes. For a gluten-free version, use GF onion soup mix and GF noodles. Fresh mushrooms can be added with the beef for extra flavor.
