  • 2 medium delicata squash, washed and sliced into ½-inch rings with seeds removed
  • 2 tablespoons avocado oil or olive oil
  • 1 teaspoon sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon cinnamon (optional)
  • ¼ cup tahini, stirred well
  • 2 tablespoons pure maple syrup
  • 23 tablespoons warm water
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, minced

Instructions

  1. Preheat oven to 400°F (200°C). Wash and slice the delicata squash into ½-inch rings, removing seeds. Do not peel.
  2. In a large bowl, toss squash rings with avocado oil, salt, pepper, and cinnamon until evenly coated.
  3. Spread squash in a single layer on a parchment-lined baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and golden-brown.
  4. While squash roasts, whisk tahini, maple syrup, lemon juice, and garlic in a small bowl.
  5. Slowly add warm water, one tablespoon at a time, whisking constantly until the sauce is smooth, creamy, and pourable.
  6. Remove squash from oven and drizzle the warm tahini sauce over the hot rings. Serve immediately.

Notes

Stir the tahini jar thoroughly before measuring to ensure a smooth texture. Use warm water for the sauce to prevent the tahini from seizing. The skin of the delicata squash is edible and adds texture. If the sauce thickens upon cooling, add a splash of warm water to thin it out.
