A comforting and sophisticated side dish featuring tender roasted delicata squash tossed in a rich, creamy sauce made from tahini, maple syrup, and lemon juice.

  • 2 medium delicata squashes
  • 1/2 cup smooth tahini
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 23 tablespoons warm water
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash the delicata squash, cut off both ends, slice in half lengthwise, scoop out the seeds, and cut into half-inch thick half-moon slices.
  3. Place squash slices on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with cinnamon, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly and spread in a single layer.
  4. Roast for 20 minutes, then flip each slice. Roast for another 15-20 minutes until tender and edges are golden brown.
  5. While squash roasts, whisk tahini, maple syrup, lemon juice, and salt in a small bowl. Gradually add warm water until the sauce reaches a creamy, pourable consistency.
  6. Transfer roasted squash to a serving bowl, pour the tahini sauce over it, and toss gently to coat. Garnish with sesame seeds or parsley if desired and serve immediately.

Notes

Do not crowd the pan to ensure proper roasting and caramelization. Flip the squash midway through cooking for even browning. Use warm water to thin the tahini sauce to prevent clumping. If using other winter squashes like butternut or acorn, peel and seed them first as their skins are not edible.
