Instructions

  1. Crush graham crackers into fine crumbs using a food processor or rolling pin in a Ziploc bag.
  2. In a medium bowl, combine graham cracker crumbs, 1 tablespoon granulated sugar, and 1 tablespoon cocoa powder.
  3. Pour 1/3 cup melted unsalted butter over the crumb mixture and stir until it resembles wet sand.
  4. Press the crust mixture firmly and evenly into the bottom of a 9×13 inch baking dish.
  5. Chill the crust in the refrigerator for 10 minutes.
  6. In a large bowl, beat softened cream cheese, 1 cup powdered sugar, and 1 teaspoon vanilla extract until smooth and creamy.
  7. In a separate cold bowl, whip 1 cup heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until just combined and fluffy.
  9. Spread the cream filling evenly over the chilled crust.
  10. Chill the dish for 30 minutes to allow the cream layer to firm up.
  11. Combine 1 cup chocolate chips and 1/4 cup heavy cream in a microwave-safe bowl.
  12. Heat in 30-second intervals, stirring in between, until smooth.
  13. Stir in 1 tablespoon butter until melted and glossy.
  14. Pour the warm chocolate glaze over the chilled cream layer and spread to the edges.
  15. Refrigerate for at least 1 hour, or overnight, before slicing.

Ensure cream cheese is softened to room temperature to avoid lumps. Do not overmix the whipped cream into the cream cheese to maintain a light texture. The glaze should be warm, not hot, when poured to prevent melting the cream layer. For clean slices, dip a sharp knife in hot water and wipe dry between cuts. This dessert keeps in the refrigerator for up to 5 days.
