  • 2 blocks (16 oz total) full-fat cream cheese, softened to room temperature
  • 1 can (15 oz) pure pumpkin puree
  • 1 tub (8 oz) frozen whipped topping, thawed
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1 1/2 cups graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar (for crust)
  • Optional toppings: whipped cream, crushed graham crackers, caramel drizzle

Instructions

  1. In a small bowl, mix graham cracker crumbs, melted butter, and 1 tbsp sugar until it resembles wet sand.
  2. Press the crust mixture firmly into the bottom of serving glasses or jars. Place in the refrigerator.
  3. In a large bowl, beat the softened cream cheese on medium speed until completely smooth (2-3 minutes). Scrape down sides.
  4. Add granulated sugar, pumpkin pie spice, and vanilla extract to the cream cheese. Beat on low until combined, then medium for 1 minute until pale and fluffy.
  5. Add pumpkin puree and beat on low speed just until incorporated (1-2 minutes). Do not overmix.
  6. Gently fold in the thawed whipped topping using a spatula until no white streaks remain.
  7. Spoon the pumpkin filling over the crust in the glasses, creating one or two layers.
  8. Chill in the refrigerator for at least 2 hours to set.
  9. Top with additional whipped cream or graham cracker crumbs before serving.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Use plain pumpkin puree, not pie filling. For a firmer texture, drain watery pumpkin puree. Chill glasses in the freezer for 10 minutes before assembling for faster setting. Do not freeze the finished parfaits as the whipped topping will separate.
