Ingredients

  • Heavy whipping cream, cold
  • Sweetened condensed milk, full-fat
  • Vanilla extract, pure
  • Salt, a pinch
  • Ripe peaches, peeled and diced
  • Lemon juice, fresh
  • Granulated sugar
  • Cornstarch
  • All-purpose flour
  • Unsalted butter, cold and cubed
  • Brown sugar, packed
  • Ground cinnamon
  • Nutmeg, a pinch (optional)

Instructions

  1. In a small saucepan, combine diced peaches, lemon juice, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and peaches are soft (5-7 minutes). Let cool completely.
  2. In a bowl, mix flour, brown sugar, cinnamon, and nutmeg. Add cold cubed butter and work it in until coarse crumbs form. Bake at 350°F (175°C) for 10-12 minutes until golden brown. Let cool completely and break into pieces.
  3. In a large, cold bowl, whip heavy cream until stiff peaks form (2-3 minutes).
  4. Gently fold sweetened condensed milk and vanilla extract into the whipped cream using a rubber spatula.
  5. In a 9×5 inch loaf pan lined with parchment paper, spread half of the cream mixture. Add half of the cooled peach filling and half of the cobbler topping. Repeat layers. Finish with a top layer of cream and a generous sprinkle of topping.
  6. Cover the pan and freeze for at least 6 hours or overnight.
  7. Let sit at room temperature for 5-10 minutes before scooping. Garnish with extra topping if desired.

Keep all ingredients cold for best whipping results. Cook the peaches to remove excess moisture and prevent icy texture. Ensure the cobbler topping is completely cool before layering to avoid melting the ice cream base. For gluten-free, substitute all-purpose flour with almond flour.
