A delicious and creamy overnight oats recipe featuring peanut butter, banana, and protein powder. This easy, no-cook breakfast is perfect for busy mornings and meal prep.

Ingredients

Scale
  • 1 cup (90g) Old-Fashioned Rolled Oats
  • 1 cup (240ml) Milk of Choice (almond, oat, or dairy)
  • 1 tablespoon (10g) Chia Seeds
  • 2 tablespoons (32g) Natural Creamy Peanut Butter
  • 1 scoop (~30g) Vanilla Protein Powder
  • 1 medium Ripe Banana
  • 1 teaspoon (5ml) Honey or Maple Syrup (optional)
  • 1/2 teaspoon Cinnamon
  • A pinch of Salt

Instructions

  1. Mash half of the banana thoroughly with a fork in the bottom of a mason jar or glass container.
  2. Add the rolled oats, chia seeds, protein powder, cinnamon, and a pinch of salt to the jar. Stir slightly to distribute the powder evenly.
  3. Pour in the milk of choice, leaving about an inch of space at the top for stirring.
  4. Add the peanut butter and vigorously mix everything together to break up the peanut butter blobs and incorporate them fully into the liquid.
  5. Seal the jar with a lid and refrigerate for at least 6 hours, ideally overnight (8-12 hours).
  6. In the morning, give the oats a good stir. Slice the remaining half of the banana and arrange it on top. Add extra peanut butter or cinnamon if desired. Serve cold or microwave for 30-60 seconds for warm oats.

Notes

Use old-fashioned rolled oats, not quick or steel-cut oats. Ensure peanut butter is natural and creamy for best mixing. If using plant-based protein, you may need an extra tablespoon of liquid. Store in the refrigerator for up to 5 days.
