  • 2 cups vanilla ice cream
  • 1 cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • Green food coloring (optional)
  • Peppermint extract (optional, use sparingly)

Instructions

  1. Rinse about 1/4 cup packed fresh mint leaves and pat dry. Remove any tough stems.
  2. Place 2 cups vanilla ice cream, 1 cup whole milk, fresh mint leaves, 2 tablespoons granulated sugar, 1 teaspoon vanilla extract, and a pinch of sea salt into the blender.
  3. Pulse first to break down the mint, then blend on high for 30-45 seconds until smooth and creamy. Add a few drops of green food coloring if desired and blend briefly again.
  4. Taste and adjust sweetness by adding more sugar if needed. Add a drop of peppermint extract for extra minty flavor if desired, blending again.
  5. Pour into tall glasses and serve immediately. Optionally, top with whipped cream or a fresh mint sprig.

Notes

If the shake is too thick, add a splash more milk and blend again. If too thin, add more ice cream. Use fresh mint for best flavor; frozen mint can be used if thawed and drained. For vegan version, substitute dairy ice cream and milk with coconut milk ice cream and almond or oat milk, and use maple syrup instead of sugar.
