A reliable, forgiving, and creamy white chicken chili made in a slow cooker. Perfect for busy weeknights, this recipe uses simple ingredients like rotisserie chicken, white beans, and cream cheese for a comforting meal that requires minimal prep.

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken recommended)
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, rinsed and drained
  • 1 can (4 oz) diced green chiles, undrained
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 8 oz full-fat cream cheese, softened and cut into cubes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. If using rotisserie chicken, shred the meat into bite-sized pieces. If using raw chicken breasts, place them in the bottom of the slow cooker.
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onion for 5 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant. (Optional: Skip this step and add raw onion/garlic directly to the slow cooker).
  3. Add sautéed onions and garlic to the slow cooker. Pour in chicken broth, diced green chiles (with liquid), rinsed beans, cumin, and chili powder. Stir gently.
  4. Add the chicken to the slow cooker. If using raw chicken, ensure it is submerged in liquid.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. If using raw chicken, ensure internal temperature reaches 165°F (74°C).
  6. About 30 minutes before serving, add the cubed cream cheese. Stir gently to melt. Let sit for 10 minutes if needed to incorporate smoothly without boiling.
  7. Taste and season with salt and pepper. Adjust consistency with extra broth if too thick, or cook uncovered to reduce if too thin. Serve hot.

Notes

Add cream cheese in the last 30 minutes to prevent separation. For a thicker chili, mash some beans against the side of the pot. Can be frozen for up to 3 months. Dairy-free version possible by swapping cream cheese.
