  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup mayonnaise (full-fat)
  • 1/2 cup sour cream (full-fat)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 10 ounces frozen chopped spinach, thawed and thoroughly squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 large round loaf of sourdough or Italian bread (1.5 to 2 pounds)
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat oven to 350°F (175°C). Cut off the top third of the bread loaf to create a lid and hollow out the interior, leaving a 1-inch thick shell. Save the bread chunks.
  2. Brush the inside of the hollowed bread bowl generously with melted butter to prevent sogginess.
  3. Thaw spinach and squeeze it thoroughly dry using a kitchen towel or paper towels to remove all excess water. Drain and chop artichoke hearts.
  4. In a large mixing bowl, beat softened cream cheese, mayonnaise, and sour cream until smooth and creamy.
  5. Stir in minced garlic, onion powder, salt, pepper, and red pepper flakes. Fold in the squeezed spinach, chopped artichoke hearts, half of the mozzarella, and all of the Parmesan cheese.
  6. Spoon the mixture into the prepared bread bowl, pressing down gently. Sprinkle remaining mozzarella on top.
  7. Place the bread bowl on a baking sheet and bake for 15-20 minutes until the dip is bubbling and the cheese is melted and golden.
  8. Remove from oven and let rest for 5 minutes before serving with reserved bread chunks.

Notes

Ensure the spinach is squeezed completely dry to prevent a watery dip. Cream cheese must be at room temperature for a smooth mixture. The bread bowl can be toasted for 5 minutes before adding the dip to help keep the crust crisp.
