Creamy Thermos-Friendly Tomato Soup

A rich, velvety tomato soup engineered to stay stable and delicious in a thermos without separating or curdling. It is quick to prepare, uses simple pantry ingredients, and offers a bistro-quality taste for easy office lunches.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 28 oz (794g) crushed tomatoes (high-quality brand recommended)
  • 1 cup (240ml) low-sodium vegetable or chicken broth
  • 1 tsp sugar
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup (120ml) heavy cream
  • 1/2 tsp salt (plus more to taste)
  • Black pepper to taste
  • 1 tbsp fresh basil, chopped

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onion and a pinch of salt; cook for 4-5 minutes until soft and translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Stir in tomato paste and cook for 1-2 minutes to caramelize slightly and deepen the flavor.
  4. Pour in crushed tomatoes and broth. Stir to combine. Add sugar and red pepper flakes if using.
  5. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 10 minutes to meld flavors.
  6. Remove from heat. Blend the soup until completely smooth using an immersion blender or countertop blender (blend in batches if using a countertop blender, venting the lid).
  7. Return soup to low heat. Slowly whisk in heavy cream to temper it. Heat gently until warm but not boiling.
  8. Taste and adjust seasoning with salt, pepper, or sugar as needed.
  9. Stir in fresh basil just before serving or packing.
  10. Let soup cool to room temperature before pouring into a preheated thermos.

Notes

Preheat your thermos with boiling water for 5 minutes before adding the soup to keep it hot longer. Do not boil the soup after adding the cream to prevent curdling. For a dairy-free version, substitute heavy cream with full-fat coconut milk. If using a countertop blender, always vent the lid to allow steam to escape.
