  • 8 oz full-fat brick cream cheese, softened
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup brown sugar
  • 2 tbsp unsalted butter, melted
  • 1 tsp paprika
  • 2024 wooden skewers
  • Water for soaking skewers
  • Fresh chives or parsley, chopped (optional garnish)

Instructions

  1. Soak wooden skewers in warm water for at least 20 minutes to prevent burning.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, combine softened cream cheese and shredded cheddar until smooth. Chill for 10 minutes.
  4. Cut bacon slices in half crosswise to create 3-4 inch strips.
  5. Thread skewers with cheese (and jalapeños if using), then wrap tightly with a bacon strip, tucking the end to secure.
  6. In a small saucepan over medium heat, melt butter, then whisk in brown sugar and paprika until bubbly.
  7. Place skewers on the baking sheet and brush generously with the glaze.
  8. Bake for 15-18 minutes, flipping halfway through and brushing with more glaze, until bacon is crisp and golden.
  9. Optional: Broil for 1-2 minutes for extra crispness, watching closely.
  10. Cool for 5 minutes before serving warm.

Notes

Soaking the skewers is critical to prevent them from burning. Use thick-cut bacon to ensure it cooks through without burning. Chill the cheese mixture to make assembly easier. Reheat leftovers in the oven at 350°F to maintain crispness.
