These baked pork chops feature a shatteringly crisp parmesan and panko crust without the grease of frying. They are juicy, flavorful, and perfect for busy weeknights.

Ingredients

  • Bone-in, center-cut pork chops (1 to 1.5 inches thick)
  • All-purpose flour
  • Large eggs, beaten
  • Freshly grated Parmesan cheese
  • Panko breadcrumbs
  • Garlic powder
  • Dried Italian seasoning
  • Salt and black pepper
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat pork chops dry with paper towels and season both sides with salt and pepper.
  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mix of Parmesan, panko, garlic powder, and Italian seasoning.
  4. Dredge each chop in flour, shaking off excess.
  5. Dip the floured chop into the egg, ensuring full coverage.
  6. Press the chop firmly into the Parmesan-panko mixture, coating both sides evenly.
  7. Place a wire rack on a baking sheet and spray lightly with cooking spray.
  8. Arrange the coated chops on the rack, leaving space between them.
  9. Bake for 15-20 minutes, flipping halfway through, until internal temperature reaches 145°F (63°C).
  10. Remove from oven and let rest for 5 minutes before serving.

Notes

Patting the chops dry is crucial for a crispy crust. Use a wire rack to ensure even browning and prevent soggy bottoms. Do not overcrowd the pan. For a spicy kick, add cayenne to the breadcrumb mix. If using almond flour for a gluten-free option, watch closely as it browns faster.
